How to Sharpen Poultry Processing Shears

Get the Edge: How to Sharpen Poultry Shears

A busy poultry production line can make up to 25,000 cuts a day. For most processors, that means you are resharpening every pair of scissors or shears (the industry uses these names interchangeably) on your line at least once a shift.

How to Sharpen Wolff Poultry Shears

Now that we understand some of the benefits, let’s take a closer look at the correct steps and techniques for sharpening poultry shears on each of Wolff’s premium sharpening systems.

Twice As Sharp®

The Twice as Sharp® scissor sharpening system sits at the heart of Wolff’s lifetime promise to provide specially honed poultry shears that cut twice as well as any factory-provided blade. Used correctly, the Twice as Sharp® sharpener allows your Wolff processing scissors to continue to deliver premium out-of-the-box performance throughout their use life.

Wolff’s sharpening method is designed to be “teachable and repeatable,” allowing consistent results to be achieved wherever our poultry-processing scissors are used.

Follow these steps to sharpen a blade with the Twice as Sharp® system. Always remember to wear proper personal protection equipment (safety glasses, N95 mask, and ear plugs) and obey all safety warnings.

STEP 1: SHARPEN FINGER BLADE

  • Slide blade slowly across the LEFT wheel with a light pressure 
  • Slide blade from pivot to tip 
  • Keep the “elbow” of the controlling arm pointed toward the machine
  • Sharpen curved blades by keeping the edge parallel to the wheel. 
  • If the machine slows down, use less pressure 
  • Release pressure when the tip reaches the center of the wheel 
  • Repeat until a burr can be felt along the entire length of the blade   

STEP 2:

SHARPEN THUMB BLADE

  • Release scissors by loosening the large black knob
  • Turn scissors over and repeat step 1 (unless the blade has serrations) 
  • Shears can be re-serrated with Wolff Industries’  Corru-Gator system after sharpening

STEP 3:

DEBURR BOTH BLADES

Both blades have now been sharpened and have burrs that require careful removal to avoid damage to the cutting edges.

  • Push the blades apart while carefully closing the blades.
  • Open the blades while pressing the blades firmly together
  • Repeat twice

DO NOT LET BLADES TOUCH DURING THE FIRST TWO CLOSINGS!

STEP 4:
HONE FINGER BLADE

  • Clamp scissors again as you did to sharpen 
  • Lift the clamp out of the bearing hole and turn it upside down
  • Swing the top arm to the right to hone on the RIGHT hand wheel 
  • Slide the blade back and forth against the right wheel with firm pressure several times 
  • On your final pass across the wheel, slide from pivot to tip stopping when the tip is in the center of the wheel 
  • Repeat several times until a light honing burr is created 

STEP 5: DEBURR FINGER BLADE

  • Remove scissors and close the blades, cutting off the tiny honing burr 
  • Close the scissors to cut off the honing burr

DO NOT SPREAD THE BLADES BEFORE CLOSING!

STEP 6:

HONE AND BURR THUMB BLADE

  • Repeat Steps 4 and 5 to hone and deburr the thumb blade of the shears you are sharpening

 

WereWolff® Scissor Sharpening System

The WereWolff® scissor sharpening system by Wolff IndustriesWolff Industries’ WereWolff® scissor sharpening system is designed to deliver precision honing to produce poultry processing shear blades 2-6 times sharper than other systems.

The system features a built-in burr removal rod. 

WereWolff® sharpeners allow similar blades to be sharpened faster once the guide block is correctly adjusted.  

Follow these steps to sharpen a blade on the WereWolff® system. Always remember to wear proper personal protection equipment (safety glasses, N95 mask, and ear plugs) and obey all safety warnings.

STEP 1: PREPARE FOR SHARPENING
  • Turn on machine and light and exhaust system (if present)
  • Dress belt with supplied belt dressing (Fels-Naptha)
  • Belt should be redressed after sharpening 10 pairs of shears

STEP 2: SHARPEN FINGER BLADE

  • Hold the finger blade’s grip in right hand, ensuring the angled cutting edge is facing upward with cutting edge towards the belt 
  • Lay the inside face of the finger blade flat on the angle block with the cutting edge towards the belt
  • Position blade with sharpening entry on the right edge of the belt at the throat of the scissors
  • Slide blade down angle block until it contacts the belt
  • When the tip of the blade is 1/4 way across the belt, remove the scissors

STEP 3: 

DEBURR FINGER BLADE

Ensure sharpening has removed any damage to the edge

  • If damage has been removed, pull the inside edge of the blade across the deburring rod
  • If damage is present, repeat Step 2.

DO NOT CLOSE SCISSORS AT THIS POINT!

STEP 4: SHARPEN THUMB BLADE
  • Repeat the procedure for steps 2-3 for the thumb blade

STEP 5:

PREPARE FOR HONING

Once sharpening burr is removed from both blades, slowly close the scissors to prepare for honing

  • Change belt in machine to the honing belt
  • Dress belt if necessary

STEP 6: 

HONE FINGER BLADE

  • Repeat the procedure for step 2 to hone the finger blade using the honing belt.

STEP 7:

DEBURR FINGER BLADE

Feel for honing burr and check burr is present from entry to tip.

  • If not, repeat step 6
  • If burr is present, slowly close scissors to remove honing burr.

STEP 8: 

HONE THUMB BLADE

  • Repeat step 2 to hone the thumb blade using the honing belt.

STEP 9:  DEBURR THUMB BLADE

  • Repeat step 7 to debur the thumb blade.
  • Turn off all equipment.
